Overview

This course provides skills and knowledge in the areas of modern pastries. This is a hands-on course where the student will gain practical experience in class.

Course Delivery

The course commences on 28th September 2023. Classes will operate one evening per week for 12 weeks, each Thursday, consisting of a 4-hour practical class from 6pm to 10pm.

 

Award

MTU: Single Module Certification (5 ECTS credits at Level 6 on the National Framework of Qualifications).

What will I study?

Modern Gateaux and small pastries made using the following:

  • Macaroons
  • Choux Pastry
  • Sweet Pastry
  • Puff Pastry
  • Chocolate Techniques
  • Fillings – glacage, mousse, frangipane, caramel, pastry cream, praline,

Note: Modifications to the configuration of the course may take place in accordance with changing requirements.

Modules

What is a Module?

A module is a standalone unit of learning and assessment and is completed within one semester. A full-time student will normally study six modules in each semester; part-time and ACCS (Accumulation of Credits and Certification of Subjects) students will have flexibility as to the number of modules taken.

Entry Requirements

Online application for this programme  opens annually in February for commencement in September. Closing date for applications is in August. Places are limited on this course and interviews may be held for participation.

 

What is RPL?

Recognition of Prior Learning (RPL) is when formal recognition is given for what you already know prior to starting on a programme or module. With recognition of prior learning the focus is on learning and not on experience as such. You can apply for RPL in any MTU accredited programme or module. Programmes which are accredited by professional bodies or any external awarding bodies may have their own procedures for RPL which you should refer to.

Fees

€550 (includes exam fee).

In addition, a €60 fee for the necessary work uniform is required.
